Momma Sue's Haskap Berry Muffins







1/2 cup butter melted and cooled

2 Eggs

1/2 cup of 2% milk

2 cups all purpose flour

3/4 cup of sugar

2 Tsp baking powder

1 Tsp salt

2 1/2 cups of fresh Haskap Berries

 

INSTRUCTIONS

 

Preheat oven to 375 degrees

Prepare muffin tins with liners or spray with Pam

Whisk together the butter, eggs and milk in a separate bowl,

Whisk flour, sugar, baking powder and salt until combined.

Stir the wet ingredients into the dry ingredients until just combined.

Be careful not to overmix or the muffins will be tough.

Lightly fold in the Haskap Berries

Spoon into muffin liners and sprinkle some sugar on top

Bake for 25-30 minutes or until tooth pick comes out clean
